Happy National Lasagna Day

Today is National Lasagna Day. Beyond stating the obvious – which is “dig in” and “If any day should be international, surely this would be it” – I can’t think of anything more that needs to be said?

    Funny thing. I adore lasagne, but only if it’s homemade. I never order it in a restaurant-perhaps too many outsized ramekins of lasgana swimming in a pool of separated chees solids. But homemade lasagna has an honesty to it that overcomes any actual excellence in preparation. Commercial lasagna is in no way like commercial pizza. It’s either great or it’s not. Because pizza? As Woody Allen once said, “Sex is like pizza. Even if it’s bad, it’s still pretty good.”
    And oddly enough, lasagna was one of my mother’s best dishes. She did get the recipe off an actual Italian mother, so that may have helped.But regardless, it’s a for which I still- and always will- yearn. I will learn how to make it myself-Ihave the recipe now- but I know it will never taste quite as good as when my mother made it for me.
