Fascinating! I must confess to never having made mayonnaise meself, largely because when I use mayo, it's only ever in a tuna salad sandwich, or on a burger (served rare-the mayo melts into the blood-heaven), and as such I feel that only Hellman's will do. Homemade mayo would have an entirely different flavour, and be far too rich. But now I shall simply have to give it a go, and dream up a reason for doing so.

Oh come on! it's easy. You know you want to . . .

It's even easier than risotto. Easier than ice cream. a few eggs, some oil, a dash of lemon. You can quit anytime you want . . .

I love mayo. I rarely buy it, because I don't use it fast enough, but I do love it. And now you have to taunt me with the idea that I -- ever willing to humilate myself in the name of trying some new culinary experience -- have never made my own mayo.

Damn you, woman...
