Is it really so difficult for trained cooks to come up with a starter, main course, or dessert that does not involve animal products in any way? Must it always be roasted vegetables and or/pasta or polenta with lashings of cream and eggs and cheese?

You know, that's interesting because I was having a not dissimilar discussion with someone the other day. Why is is always roasted vegetables? They seem to manage quite a vegetarian variety it in other regional and ethnic cuisines - notably the discussion I had touched on the Asian and Middle Eastern cuisines. I imagine some of which are also vegan appropriate.

Otherwise you're right - it seems a failure of imagination - or narrow experience.
